                        TRADITIONAL CARIBBEAN DISHES

Traditional Caribbean recipes are a blend of different styles of cooking. The Caribbean area is a place where
several cultures meet and melded to become something different. Each culture has added its own flavor to the pot and therefore the foods of the Caribbean are a blend of many nationalities. You will find a touch of English, Spanish, Dutch, Asian, French, and American in the dishes of the Caribbean. I will be telling you more about the area in my blog, but I want you to sample some of the traditional recipes that are enjoyed there.

      


Everyone likes nourishing meals that are easy to prepare as they save time and money. The
following recipe is in that category. 

 

Hot Pot

         1/2 lb. (225 g) stewing steak                   1/2 lb. (225 g) white potatoes
          
3/4 lb. (325 g) yellow yams or sweet potatoes
         
1/4 lb. (100 g) tomatoes                          Bouquet of herb
          
Seasoned flour                                       1 large onion
          
1/4 lb. (100 g) chochos (chayote)             2 tbsps. butter or margarine
          
1/2 lb, (225 g) carrots                              Piece of red pepper

Wash meat and cut into serving pieces.  Dip in season flour. Brown in the butter and allow to cook in small quantity of water for 20 minutes. Prepare yam or sweet potato, Irish potato, carrot, onion and chocho, cutting into serving pieces of desired size. Remove pan from heat. Arrange ingredients in pan in the following order: one layer yam and Irish potato, one layer meat and other vegetables. Continue in alternate layers as above until all ingredients are included. Pour on desired amount of hot water and add a few pats of butter or margarine, and other seasonings. Cover and simmer until vegetables are tender and meat cooked.
